Scone
Light and fluffy with rich buttery flavor
Ingredients-
2 cups (260 grams) all-purpose flour
1/4 cup (50 grams) granulated white sugar
2 teaspoons (10 grams) baking powder
1/4 teaspoon salt
1/3 cup (75 grams) cold unsalted butter, cut into pieces (if use salted, then skip salt)
1 large egg, lightly beaten
1 teaspoon pure vanilla extract (optional)
1/2 cup (120 ml) milk / yogurt, or mix of two
How To Make-
1. Preheat oven to 375 degrees F (190 degrees C), line baking pan with parchment paper
2. Measure everything and put them in different bowls, then place them in the refrigerator for 30 mins
2a. Sifted flour in a large bowl
2b. Cutted butter
2c. Sugar, baking powder, and salt
2d. Yogurt/milk and vanilla extract
2e. Dried fruit or nuts
Make sure all ingredients are cold before mixing, it could prevent butter from melting.
3. Add all dried ingredients in large bowl, sift together the flour, baking powder, sugar, and salt
4. Add cutted butter, blend into the flour mixture with a pastry blender. Mix and cut the butter into tiny pieces, The mixture should look like coarse crumbs.
5. If you want to add any flavor (dried fruits, chocolate chips, or nuts), add it before blend liquid ingredients
6. Add vanilla extract and egg into the yogurt/milk mixture, lightly beaten
7. Make a hole in the middle of the mixture, pour liquid ingredients mixture
8. Stir all the ingredients until them just combined.
Do not over mix to make the scone fluffy.
9. Knead the dough gently on the lightly floured surface, then pat into 2.5cm height round. Use round cookie cutter to cut dough into rounds
10. Place the round dough on the baking sheet, brush melted butter (can also use milk or egg yolk) on top of the dough to help golden the scone surface
11. Bake for 12-15 mins (The scone is ready when using a toothpick inserted into the center comes out clean)
